Day's Defile is aged for 6+ months in used barrels from Cinder, Split Rail, and other Idaho wineries. Each spring snowcaps melt, feeding the 'Lost' rivers that disappear under porous volcanic basalt. The water is filtered through miles of subterranean tributaries that eventually meet the Snake River Aquifer, the water used to make this whiskey.
